A less aggressive approach with the intention of finding balance and YOUR goldilocks zone for a particular coffee.

Similar approach to Darkside with a few tweaks.
Fully developed from mid first crack Level 1.7 onwards.
12 min MAX Level 5.2 just on 2nd crack depending on the bean, definitely worth a comparison with Darkside both at 5.0. Developed using specialty grade Brazil, Colombia and Guatemala.

As an example I have Brazil Fazenda Progresso natural https://melbournecoffeemerchants.com.au ... o-natural/

Dropped at the following Levels:
1.7 - 12% Weight Loss (First crack 3/4 done)
2.4 - 13%
3.0 - 14%
3.5 - 14.4%
4.0 - 14.8%
5.0 - 15.8%

These will be cupped blind after 7 days rest to evaluate where this bean might shine best.
My guess is that many people may find their goldilocks zone for a more traditional roast somewhere in the Level 4 to 5 range. Overall this roast profile / fan profile seems to be in the sweet spot for the KL when trying to achieve an increasing power profile and declining ROR.

Results from cupping.

My preference was for the lightest roast at 1.7 with 2.4 still being quite drinkable.
This profile seems good at reducing acidity and as the roast gets darker this becomes even more apparent. A good option for those looking to reduce acidity in their espresso. Overall I find Darkside better for darker espresso roasts.
