What is a good one to start with?

Ever since I got my Nano in early 2019, I've been stuck on Steady & Dark with Brazilian Organic @ 4.8. Haven't experimented as a result.

This is one of my favourites too, particularly for blends where I just want to throw everything together and just get a well developed medium-dark or dark roast without having to put much thought into it.

i know it’s back to trial and error. what rest period do you recommend for these profiles? specifically the Steady and Dark 2…. using for espresso double shot with milk (piccolo)? i’m guessing at least 3days. but best at 7-10days?

Sounds about right. I usually find things a bit too harsh for the first couple of days then they mellow off over the next few weeks.
