columbian popayan

hi there guys. I'm new to the roasting game. I'm trying to work out how to get the nutty/chocolate flavours. I've been using the rest 1500-2000m profile... L3.2 was pretty good... I've currently got a L3.8 on the go.... are there any other profiles that you would recommend for the columbian beans? and if so, what level to start with to avoid the acidity/smoke taste? we normally use it with an expresso machine with milk (picollo)...
