This profile starts with a kick. It then eases off to even out the temperature gradient in the beans prior to first crack. After that it keeps the pace on to deliver a complex result that balances acidity with development by not giving too much time for the beans to even out after first crack. It is particularly good for dense beans that respond well to the initial kick. This profile was first roasted at Espresso Ninja in Wellington NZ.
A small update was made on 19/7/2020 to improve the definition of the final point in the profile - which removes a warning when saving from Kaffelogic Studio. It doesn't otherwise affect the behaviour of the profile.
The minimum desired rate of rise was also reduced from 4.8 to 2.8 to give Ninja II with improved curve following for longer development times.
